i'm a fairly nubcaek when it comes to anime, and would like to watch some more good anime.. i guess good is kinda a broad subjective term.

i've seen a few anime films:
akira
metroplis
princess monoke
ghost in the shell
macross
cowboy bebop, the movie

err. i think that's it. i pretty much liked it all. yeah, soo for all the nipponophiles [sic?], gimme some titles to watch! :D

Princess Tutu!

Considering your anime background, Trigun might also be a good choice.  Sadly I can't think of other good "serious" animes that I've seen that you haven't as they tend to come of several degrees of shallow "deep-talk."

And Excel Saga.  That is all.

its auctaly just called "Berserk" most generaly, might make it easier to find :p watch cowboy beebop the series if you seen the movie. try Ninja Scroll. Maybe Inuyasha. The Gundam series are pretty serious, like Gundam Wing. Ruroni Kenshin is kind of funny/serious/romantic

what I do when getting a new series is i usaly download 5 or so episodes, and I can usaly tell if I will like it, if not, i will download a few more. Truth be told, there is only 1 anime series I didn't like., "Pilot Candidate"

~cracks fingers and grins~

ookay! lets see...
In no particular order...

Hellsing - good but ends surprisingly fast =o
Blood - same review as hellsing really ^^;
Cybercity - classic and one of the funniest dubs I've ever seen... one of only 2 animes I've never seen the sub of =s
You're Under Arrest - Police action on the motorways.  has a mix of lots of things, probably more of a shoujo (aimed at girls) than a shonen (aimed at guys... waii for random japanese words!) but daaaamn good =3
Dragon Half - Super funny!!!
FLCL - mucked up and if you can get over how weird it is, extremely funny ^^
DO NOT WATCH FLCL BEFORE EXCEL SAGA, IT WILL RUIN ES FOR YOU!!! o.O
Excel Saga - weird gigglefest and great... just watch this before FLCL because this'll probably ready you for the oddness ahead ^~
Bubblegum Crisis - ye olde classic and still good!
Bubblegum Crisis 2040 - different from the original in a lot of ways but gripping and just overall cool =D
Beserk - pretty cool but the others mentioned it already =3
Ninja Scroll - not bad... pretty much an action flick and possibly worth a watch but don't watch ninja resurrection... ever... I mean it ^^;
Samurai X / Rurouni Kenshin - Super cool! the Samurai X films trust and betrayal are very, very serious and dramatic while the series is a lot more light-hearted but still addictively good.
Laputa : Castle in the Sky - watch this or I'll hurt you XD
Porco Rosso - very epic tale with parts that fill you with sadness or wonder.
Giant Robo - surprisingly good ^^
Patlabour (any of them) - hmm... this one's odd.  If you're in the mood for something deadly serious and interesting watch this, the animation is beautiful as well.  Unfortunately you honestly need to be 100% in the mood for this or it'll bore the pants off you.  So pick your timing wisely =s
Stellvia of the Universe - kids in space school! waii!
Scrapped Princess - just a good watch really, fantasy with hints of sci-fi buried deep in there =P
Wings of Honnemise - probably mispelled the honnemise part but it's a pretty serious anime about a fictional first man in space thingy.  Engrossing but has some slow parts to it.
Spirited Away - Very old fairy tale fantasy styled anime.  like most studio ghibli stuff it's a great watch and leaves you feeling good afterwards ^^
Nausica of the wind valley - Great stuff in a weird fantasy world, also a studio ghibli of note =3
Grave of the Fireflies - this will make you cry, guaranteed =s
Trigun - if you don't watch this then... well... I feel sorry for you =P
Martian Successor Nadesico - comedy, romance, plot twists, mechs, space and a huge cast of characters... this is honestly one of the best series out there =D
Vandread - odd story but compelling... somewhat like Nadesico but more comedic and very much worth the watch (ignore the badly done computer graphics in the space fights, it's worth it ^^; )
Ghost in the Shell: Standalone Complex - great series and far more faithful to the mangas though the major seems to always run about in a skimpy costume for some reason o.O
Perfect Blue - warning! severely warped! this will make your brain explode and has a scene in it that made me cringe... but it's still a good film =P
Serial Experiments Lain - weird... just plain weird... o.O
Konjiki no Gash Bell! - waii! feel-good factor series.  a lil odd but fun =3

...aaand I could name more but that should keep you occupied for a while ^~

gem is silly edit: I can't believe i didn't mention chobits @.@

Though my viewing of anime is has been someone limited by some standards, I'd be more then happy to suggest some anime. Is there any genre you'd want to shoot for? These are not in any specific order. These are anime that I have seen and have enjoyed.  <3 If you'd like more information on these series I've linked each to their respective description at animenfo.com. Enjoy.  ;)

Neon Genesis Evangelion, also known as Eva for short, is debatably one of the best. (Action, Drama, Mecha, Science-Fiction) Series (26 ep), Movie, OVA

Rurouni Kenshin is also a very good one. I recommend the first 2 seasons, since after which they diverge from the manga (Action, Adventure, Comedy, Historical Settings) Also if you like this series then or maybe want something a little less comical the 6 OVA Episodes (Action, Drama, Historical Settings, Romance) are excellent and I HIGHLY suggest watching these even if you don't watch the series. The first 4 OVA episodes give backstory of Himura Kenshin and the last 2 give a summary of the series and what the anime series follow from the manga. Series (24 ep per season, i think slightly over 100 ep all together), Movie, OVA

X the movie & X the series, also known as X 1999 in the states, dispite the name they are not ecchi or hentai, aka porno. The Movie was completed before CLAMP, the creators of the manga, finished the manga. I'd suggest this to anyone, but it is a quite graphic. Much like Eva it's the story of the end of the world. (Action, Fantasy, Magic, Super Power) Series (23 ep), Movie

Naruto is probably THE most popular series that is current being aired in Japan right now. The series takes a little bit to get into but if you hold out long enough it'll have you hooked. The draw back in this series is that it has times that it goes very slow, this is mainly due to the fact that the manga is still being released and they want to stay and hold true to the manga. You can only get it through fan subs atm. (Action, Adventure, Comedy, Magic, Martial Arts) Series (68 ep, 3 seasons worth)

Full Metal Alchemist is a very new seires. In fact it's still being released in Japan. And another series only avilable through fan subs(Action, Adventure, Comedy, Science-Fiction) Series (ep ?)

Scrapped Princess is fairly new anime series. A VERY popular series. (Drama, Fantasy) Series (24 ep)

Serial Experiments Lain is an exceptional Sci-Fi anime. (Drama, Science-Fiction) Series (13 ep),

Trigun (Action, Comedy, Science-Fiction) Series (26 ep)

Love Hina (Comedy, Ecchi, Romance, Schoolkids) Series (24 eq), OVA (3 ep), and 2 Specials)

Chobits (Comedy, Drama, Science-Fiction) Series (26 ep)

Jin-Roh this is an SUPERB movie. (Action, Drama, Science-Fiction) Movie

Rahxephon (Action, Mecha, Science-Fiction) Series (26 ep), Movie

Vision of Escaflowne (Action, Adventure, Comedy, Fantasy, Mecha, Romance) Series (26 ep), Movie

Well, since this seems to have been overlooked, allow me to add it.

Grave Of The Fireflies / Tombstone Of Fireflies:
anidb.net description

This is probably one of the best movies i have ever seen. Bar none. As far as i'm concerned, it's right up there with Star Wars and Blade Runner.

It's set in World War 2 Japan and follows the life of two young children after their city was bombed. They go to live with their aunt, and end up running away to make it on their own. This is, without a doubt, Studio Ghibli (My Neighbor Totoro, Spirited Away, Kiki's Delivery Service, etc etc...)'s finest film and is a total tear jerker as it approaches the end.

You can pick up the DVD really cheap over at yesasia.com (make sure you check that it has English subtitles first :)) and i believe it's worth every cent.

And now onto some more....

Great Teacher Onizuka:
anidb.net description

This is one of the greatest series' i've ever had the pleasure to watch. It's 43 episodes long, and while the last episode or two are a bit disappointing (NO! DON'T END!) the whole series is well written, well animated and really funny.

Ex-motorbike-gang member Eiichi (If i remember correctly) Eikichi Onizuka turns to school teaching which can only lead to "hillarious concequences". But it does actually, putting his past experiences into practice as a teacher, trying to win over his class of delinquents as they try their hardest to torment him and get him fired.

Gem, I'll have to agrue with you.  Excel Saga blows away FLCL that you don't really need to see the latter (oddly enough I watched them in the opposite order).  Excel Saga is the heir of Tokyo Pig and might even be better.  FLCL tries to be random and fails.  The music's quite good however.  I'll say it's the best thing out of Enroniax though.

Despite what it may seem, FLCL doesn't always try to be random.  Most of it (except the odd thing the director felt like putting in just 'cause) is generally coherent.  Watch it a few more times and you'll understand it.

Wow... I can't believe people forgot the following:

Slayers. Think of D&D and all your tabletop misadventures you've had with your buddies... then put it in anime format. Seriously, this is pretty much all the stereotypical archetypes that gamers play... the dumb warrior, innocent and good for all cleric, brash sorceress, etc etc, with the silly OOC side comments kept in for good measure! Great laughs, fun time.

Lupin III - Just as much a hit now, it's an oldie and a goodie. International thievery with comedic hijinks to boot.

His and Her Circumstances - My only complaint was that the ending seemed a little anti-climactic... however, the entire series is pretty much a year of high school. It's a romantic comedy, and I really liked it because it was cute, with occaisonal bouts of randomness. Uranium, watch this because the characters in the series have realistic hair colors. There's still the different from plain black, but judging from what my friend has sent back of what the modern teenage crowd is doing, these characters could fit more or less right in.

And I must say I loved Perfect Blue... of course, mindf_cks are my kind of thing, I like being messed with, and having it all come together at the end.

Mouse, my gf is addicted to Fullmetal Alchemist, and I must say I enjoy it too, although not as much as shoujo ^_^;;

I would've mentioned slayers but it's too hard to get hold of the really good stuff =P

The TV series is ok (but I'm a purist who's read some of the novels slayers came from so I get pissed they totally redesigned lina) but I'm more of a slayer OAV fan.  Jeffrey's knighthood from the book of spells is a giggle and i hear the new stuff in slayers premium is amazing, including even a mickey take of the matrix but my fav films are only just getting a DVD release from ADV now despite being out for ages o.O

Slayers Great and Slayers Gorgeous are so funny it hurts... perfect is pretty good too though =3

hida edit: I dunno... I did see excel saga first so seeing them again probably did have the 'seen this before' aspect to it.  I just find that when I show friends excel after FLCL for the first time they just don't seem to enjoy it as much as the other way around, so I just show new people excel first so they get the best out of both of them =3
